The importance of potable water is not to be underestimated. Not only does water have obvious practical use, but it is also able to bless and curse items if it is itself so imbued.

Special Details

When aflame, you can throw a bottle of water in the air (select a space two squares "above" you), at the ground (two squares "below"), or at an adjacent wall. It will crash on you and extinguish the fire. This same technique can be used to extinguish aflame minions. Note that it may also extinguish your, or the minions', flaming swords etc.

Dipping a torch or flaming sword into a bottle of ordinary water will extinguish it. Doing so consumes the water. (Dipping these weapons into a bottle of holy or evil water will not extinguish it, but just bless or curse it as below.)

Throwing a bottle of water at a fire elemental will damage it. (50+1d50 damage)

Pax, or Xom, can turn all your water holy.

Throwing holy water at undead will damage them as if it was acid, and likewise if an undead (avatar) tries to drink it.

Dipping an item (or stack of items) into a bottle of holy water will uncurse the item if it is evil, or make the item holy. Similarly, dipping an item into a bottle of unholy water will return it to normal if it is holy, or make the item evil. Either action consumes the water. Note that dipping into ordinary water won't consume the water unless you extinguished something -- this can be used for testing!

Duplication Technique: As noted dipping a stack of items into holy water will make the whole stack holy. Thus you can "breed" holy water by dipping a stack of normal water into a single bottle of holy water. Combine this with a square of water (to refill empty bottles) and you get an endless supply of holy water to bless all items in your inventory. Aside from the useful effects which holiness has on some items, this also saves space in your inventory. For example, you might have three holy Rings of Regeneration (stacked in one slot) instead of one each holy, normal, and evil rings (three slots). If you have a lot of holy water, it's best to Split one or more off of the stack, so you won't lose them all to a single divine punishment. You'll need to redo the splitting each time you Sort your inventory, or you can just stash the "backup" somewhere safe.
